Hermit Cookies
Healthful cookies to have on hand for Halloween! (or anytime!)
Ingredients:
2 eggs, lightly beaten
7/8 cup canola oil
1/2 cup sugar
1 cup molasses
2 cups whole wheat flour
2 cups unbleached white flour
4 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
2 teaspoons ginger
1 teaspoon ground cloves
1 cup chopped walnuts
1 cup date pieces
Preheat oven to 350 degrees.
Lightly grease two cookie sheets.
Use wire whisk to beat the eggs in a large bowl.
Add oil, sugar, and molasses, and whisk again.
In a medium bowl, combine flours with baking soda, salt, and spices.
Add to sugar mixture and mix well.
Stir in nuts and date pieces.
Roll into balls the size of walnuts and place on cookie sheets 2 inches apart.
Bake 12 to 15 minutes.
Transfer to wire racks to cool.
Makes 3 dozen.
